1.What is phospholipid

Phospholipid is a component of body cells. It was found in human brain by Uauquelin in 1812. In 1844, the French Gohley first isolated exogenous phospholipid from egg yolk, so it is called lecithin. The naming method of lecithin has lasted for a long time. Until now, many people still can't distinguish the "phospholipid family". In fact, lecithin is only a part of phospholipid in the true sense, and phospholipid also includes cephalin and phosphatidylinositol.

When it comes to phospholipids, we must talk about cells and cell membranes. Because all organisms animals, plants and microorganisms are composed of cells. The outer layer of the cell is called the cell membrane. Many organelles in the cell also have membrane structures. The main material that constitutes these membrane structures is phospholipids.

2.Phospholipid family

The phospholipid we often say is a concept of mixture, which includes many phospholipid active ingredients with different structures and functions.

Among them: phosphatidylcholine (PC), phosphatidylinositol (PI), phosphatidylethanolamine (PE), phosphatidylserine (PS), phosphatidic acid (PA), etc. Generally speaking, phosphatidylcholine (PC) is more specifically referred to as phosphatidylcholine (PC). Because it has the largest content in phospholipid functional groups, it can affect human health in many ways. Therefore, the content of phosphatidylcholine in products has become an important standard for us to judge the quality difference of phosphatidylcholine products.

3.Food rich in phospholipids

Soybean, mushroom, egg yolk, walnut, nut, roe, chicken, duck, fish meat and animal viscera, etc. People first found phospholipid in egg yolk, so it is often called "lecithin". Later, people found that soybean is a more abundant and easily available source of lecithin. So now, whether lecithin is used as an additive in industry or used as a nutrient or health product by people, the vast majority of lecithin is soybean phospholipid extracted from soybean, just habitually following the name of lecithin.

Why is phospholipid intake easy to lack in modern people? Because many modern people worry about obesity, they intentionally eat less meat, especially fat meat, animal viscera, eggs, etc; Modern food processing is fine. Refined oil and salad oil reduce the original rich lecithin; Because lecithin is not heat-resistant, its activity is easy to lose after exceeding 50 ℃, and the cooking method will also affect the intake; Children and the elderly are more likely to be undernourished because of their limited food choices and digestion and absorption capacity; Students' learning burden is too heavy on their brains, and white-collar life and workplace pressure are too high, which will consume a lot of lecithin and increase the demand.

At the same time, we all know that due to the increasing age, deterioration of living environment and bad living habits, a large number of free radicals are produced in the body. Free radicals will directly oxidize phospholipids on cell membranes, causing damage to cell membrane structure, and thus directly affecting cell physiological functions. Some people liken phospholipid PC to "building material of cell membrane". Paying attention to the intake of phospholipid PC will have a positive impact on many of our physical functions.

4.Health effects of phospholipids

(1)Phospholipid is indispensable to cell membrane

Our body is made up of cells, and phospholipids are the main components of cell membranes.

Moreover, phospholipids play an important role in promoting the growth of cell tissues, activating cells, maintaining metabolism, basic metabolism and the balanced secretion of hormones, and enhancing human immunity and regeneration.

(2)Promote brain development

The proportion of phospholipids is as high as 30%, and the proportion in brain cells is even higher, accounting for 70-80%. Supplementing phospholipid during pregnancy is also very beneficial to the development of fetal brain. To put it simply, you are so smart, and your phospholipid power is indispensable!

In addition, the decrease of acetylcholine, a neurotransmitter in the brain, is the main cause of Alzheimer's disease, while choline in phospholipids can combine with acetyl in the human body to obtain acetylcholine, thus providing sufficient information conduction substances for the brain, which is extremely beneficial to Alzheimer's patients.

(3)Vascular scavenger

Too much cholesterol in the blood is the main cause of arteriosclerosis.Cholesterol is attached to the blood vessels of the human body like scale. As time goes by, the elasticity of the blood vessels becomes poor, and blood flow is blocked, which causes heart and brain diseases. Hypertension, thrombosis, cerebral haemorrhage and other diseases are caused by a large amount of cholesterol and lipids deposited on the vascular wall.

Just as detergents can clean scale, phospholipids can emulsify neutral fats and deposited cholesterol into harmless particles that are soluble in water and easy to metabolize; At the same time, it can inhibit the deposition of excess fat in the blood vessel wall and relieve the pressure on the cardiovascular and cerebrovascular walls.

(4)Anti aging

The reason why people age is the aging of cells.

The process of cell death and regeneration is the process of cell consumption of phospholipids. If the phospholipid consumed by people every day is not supplemented, cells will be in a state of nutrient deficiency, lose vitality, and gradually die, eventually leading to human aging.

5.Application fields of phospholipids

(1)Cream and dairy products are the common fields of phospholipids. Their good emulsifying properties enable fat particles to be evenly dispersed, making them more stable and fluid.

(2)Baked products and phospholipids can improve the processing characteristics of dough, make the water distribution more uniform, and form a complex with protein to increase the stability of the product. In addition, phospholipid can make baked products more easy to demould and have a smooth and beautiful appearance.

(3) For candy, chocolate, etc., emulsifiers are commonly used additives for candy, chocolate, etc., which can make the product mix more evenly without sugar and separation.

In addition, the good dispersion of phospholipids can also promote the dissolution of particles, such as milk powder, soybean powder, etc., which can not only improve the product characteristics, but also give the product health value, with the dual nature of nutrition and improvement.
